POTATOES, SMASHED SALTY

This recipe starts with the Syracuse Potatoes we love for picnics and lunch boxes. They are great alone and amazing as smashed garlic potatoes as seen in our dinner shows.

Ingredients:

  • 2-3 pounds small red new potatoes (size "c)

  • 1 cup salt
  • 1 head garlic, roasted
  • Seasoning: sea salt, coriander, pepper as needed

Method:

Place salt into one gallon of water and bring to boil. Add potatoes and cook for 15-20 minutes until knife tender.
Drain water. Place potatoes into bowl and add roasted garlic and smash roughly with large hand masher. Season to taste.
Roasted/Poached Garlic



Ingredients:

  • 1 head garlic

  • 3/4 cup EVOO (your choice)

Method:

Clean garlic; split cloves in half and remove core sprout. Place halves into small sauce pan and cover with EVOO. Bring up to simmer on low heat. Poach in oil until halves of garlic are knife tender. Serve immediately or store in refrigerator.

Chef food safety note: Never allow garlic in oil or garlic butter to be held at room temperature. Keep refrigerated until needed.
