SMOKING RICOTTA CHEESE

Ingredients:

  • 3 pounds ricotta cheese, placed in cheesecoloth and tied
  • 1 cup cherry wood chips, dry

Method:

Set up smoker using disposable pan and grate rack that will sit above the wood without touching. Place ricotta bundle over rack and place on high heat. Once fully smoking, lessthan one minute, cover with lid or foil and smoke for 2 minutes. Turn off flame and allow to smollder for 2 additional minutes. Go outdoors to remove lid, tilting away from you. In the refrigerator, drain the smoked cheese until it is completely chilled. Now it is ready to fill pasta or use as is in any dish you wish to have a smoky mild cheese flavor.



Recipe Yield: 38-40 ounces drained smoked ricotta
