SORBET, ORANGE, MADE WITH CANDIED ORANGE PEEL SYRUP

This one was the lucky result of having a leftover product. We ran candied orange peel as a garnish on dessert for an entire month November 2013. Since it is fresh orange season, we wanted to add orange sorbet on our December 2013 menu. Instead of using fresh oranges and juice exclusively, Bob decided to use the leftover candied peel and syrup to make it. To say it was an improvement is an understatement. So here we go with another recipe that requires another recipe before you can make it. Our dinner show guests agreed it is worth the effort. We served the orange sorbet with chocolate date cake with ganache, but the candied orange peel sorbet was the star!

 

Ingredients:

  • 1 cup fresh squeezed orange juice

  • 1/2 cup water
  • 1/2 cup sugar
  • 1 cup orange syrup from candied orange peel
  • 3 tablespoons candied orange peel, finely chopped
  • pinch of salt

Method:

Bring orange juice, sugar and water to boil and dissolve sugar. Add orange peel syrup and candied peel and bring it back to a boil before removing from heat. Cool. Churn according to your ice cream maker machine directions.
