SWEET POTATO FILLING FOR RAVIOLO

Ingredients:

  • 1 each medium sweet potato

  • 1 each small yam
  • 1 each russet potato
  • 1 each pink lady apple
  • 2 shallots, peeled
  • 1 head garlic, peeled

    As needed sea salt, ground coriander, ground pepper

  • 1 ounce salted butter
  • 1 Tablespoon EVOO
  • As needed maple balsamic vinegar

Method:

Wash and dry potatoes and apple; coat all (including shallots and garlic) with enough EVOO to cover; place on parchment lined pan and bake at 375F for approximately 30 minutes; remove apple, shallots and garlic and continue cooking potatoes until they are soft to the touch when pressed, approximately 20 minutes longer; cool slightly and scoop into a food mill; process apple, shallots, garlic and potatoes to a mixing bowl; adjust seasonings and chill for service.

Note: maple balsamic will give a nice acid balance to the starchy mixture.
