TZATIKI SAUCE (yogurt)

Ingredients:

  • 1 cucumber, peeled, seeded, diced

  • ½ red onion, minced
  • 2 TBS dill, chopped
  • 2 cloves garlic, paste
  • ½ lemon juiced
  • 2 cups yogurt

Method:

Combine all ingredients 30 min prior to service.  Adjust seasoning with sea salt, coriander and pepper. *Optional – hang yogurt in cheesecloth 24 hours before using to create a drier sauce.
