VEGAN AIOLI using AQUAFABA

Ingredients:

  • 1/2 cup garbanzo bean water, plus a few garbanzo beans (8-10)
  • 1 Tablespoon lemon juice
  • 1-2 cloves (sprout removed) garlic
  • 1/2 cup EVOO plus 1/4 cup
  • 1-2 teaspoons Dijon mustard
  • to taste, salt and fresh ground pepper and coriander

Method:

Combine and blend bean liquid, beans, garlic, lemon juice, Dijon mustard in a blender. While running slowly drizzle in the oils until it thickens. Season with Salt Pepper & Coriander to taste.
