VEGETABLE RAGU

This goes great with summer cherry tomato sauce atop Pasta with Herbs (see recipes)

Ingredients:

  • VEGETABLE RAGU

  • As needed EVOO
  • 2 large Japanese eggplant, diced
  • 1 large red bell pepper, diced
  • 1 zucchini, diced and or other
  • 4 cloves garlic
  • 2 shallots, minced

    ½ cup Cremini mushrooms, diced

  • 2 cups tomatoes, peeled, diced
  • ¼ cup parsley, chopped
  • TT sea salt, ground coriander and pepper
  • 1 TBS balsamic vinegar
  • 2 tsp basil oil

Method:

Place oil in large heated sauté pan; add eggplant and cook until slightly browned, approximately 2 minutes; add zucchini and cook 2 minutes; add bell pepper, garlic and shallots; cook 1 minute; add mushrooms and tomatoes; cook to blend flavors, approximately 5 minutes (vegetables should be tender); add parsley and adjust seasoning; finish with vinegar and basil oil.
