WATERMELON ONION SALAD

Cut fresh watermelon into 4-6 serving wedges.

Blend a dressing of 1 cup minced red onion, 1/2 cup parsley or mint, 2-3 tablespoons cider or red wine vinegar, and 3-4 tablespoons good EVOO, and season with Salt Pepper Coriander.  Spoon a tablespoon dressing on each wedge of melon. Sprinkle with 1 cup  crumbled feta cheese.

Chef Note: Dice 1/2 inch watermelon cubes instead of the wedges for change of pace. Especially if there are seeds in the melon. Might be easier to remove.
