ZUCCHINI CORN SALSA, GRILLED

INGREDIENTS
1 thin zucchini, cut lengthwise to remove the outside skin and meat up to the seeds Do this all around the zucchini until only the square center of seeds remains and 3-4 strips of skin and meat for roasting (save the seeded center for soup or add to your masked potatoes for extra nutrition.
1 ear corn, grilled just to char slightly; remove corn from the cob and cool
1 jalapeno, seeded, minced
1 small red seeded bell pepper, diced
1 small red onion, (sprout-out), minced
1 fresh tomato, diced
2 tablespoons red wine vinegar
2 tablespoons avocado oil or olive oil
1 teaspoon salt, 1/2 teaspoon coriander, and few grinds of black pepper
1/4 cup cilantro leaves, no stems, whole

METHOD
roast or grill the strips of zucchini and then dice
Combine all ingredients into bowl; toss. Serve with grilled chicken or beef. or on top of a bowl of tortilla soup.
