SALSA, GRILLED CORN LIME

INGREDIENTS
2 ears corn on cob, grilled, then cut off cob
1/2 red onion, minced
1/2 red bell pepper
Juice of one lime
1 Tablespoon mayonnaise
1 tablespoon EVOO
1/4 cup cilantro leaves
1/4 cup cotija cheese
Salt, pepper to taste

METHOD: Blend ingredients  except seasonings. Taste and season.
We used this as confetti salad on or with our tamale stuffed poblano pepper on black beans with sour cream atop a crispy fried Tostada.
