SPICE BLENDS

By:

Cooking with SPICE BLENDS is more then just a fad. There are whole stores dedicated to selling spice! Today small containers of versatile flavored blends are replacing the need for a full cupboard of individual spice boxes and cans, and a side benefit is that we typically gain storage space in our pantry cupboards.

Many of you know we publish our SPICE BLEND recipes in our on-line cookbook, and so one might wonder why buy the little containers that are already blended? Well besides gaining cupboard space, we are insuring freshness because the blend gets used up before its volatile oils diminish as it ages. Shelf life for spice is about a year, and only if we keep them well covered, cool and in a dark cupboard or drawer. One suggestion when buying blends is to buy the ones without added salt, unless it is a flavored salt. Our blends are salt free for you to stay in control.

Only our Coriander salt has salt added because the ratio is the perfect blend to help control the use of salt in a product. This is because coriander’s aromatics and flavor enhances salt and many times reduces the required measure of salt in a recipe. Of course this is best demonstrated when you grind coriander seeds fresh on anything to which you also add salt. You will find yourself using less salt.
