STEAK, TENDERLOIN, BUTTER BASTED

INGREDIENTS:

4 each beef (grass fed/finished) approximately 4 oz
Sea salt, pepper, coriander as needed
2 tablespoons high smoke point oil such as grape seed
3 tablespoons unsalted butter
3 tablespoons fresh herbs, minced
finishing salt for the table, if desired

METHOD:
Season and sear steaks all around, browning evenly, for about 1 1/2 minutes. Add butter and hers; as butter melts and froths, begin to baste each steak with herb butter. Remove steaks to platter for holding along with some of the buttery herbs. Rest 30 seconds. Serve
